Macaroni ‘N’ Cheese

Make sure to bring some foil pie tins with you – the kids use them all the time to put together dishes like this.

Serves: 4

Ingredients:

1 lb. of elbow macaroni

1 lb. of Cheddar cheese, shredded

1/4 c. of milk

butter – 1 T. per pie pan

Parmesan cheese, grated

seasoned breadcrumbs

salt & pepper and hot sauce

4 aluminum foil pie pans

Preparation:

1. Bring a big pot of salted water to boil for the pasta.

2. Cook the macaroni to al dente and drain. (Don’t overcook it as it’s also going on the grill.)

3. Let the kids make their own mac ‘n’ cheese combos in individual pie pans, mixing up cooked macaroni, shredded cheddar and a little milk. Have them mix their ingredients well and sprinkle with breadcrumbs and Parmesan. Cover the mixture with dots of butter – about 1 T. total per pie tin.

4. Cover the pans with foil and cook on the grill, about 10 minutes until the cheese and butter are melted.

5. Stir the mac ‘n’ cheese again before serving it to mix up the cheese sauce.

Variations:

• Omit the breadcrumbs for a smoother consistency.

• Add ½ cup of cooked veggies to each pie plate. Try peas and carrots, canned corn, sautéed spinach, cooked frozen peas, edamame or fresh, chopped tomatoes.

• Use Mozzarella or American cheese instead of Cheddar.

• Used crumbled crackers, like Ritz, instead of breadcrumbs.

• Add ¼ c. cooked and drained ground beef or a couple of ounces of diced ham to each serving.

• Use boxes of instant mac ‘n’ cheese, such as Kraft brand. I like it, and it has that special orange color you can’t find anywhere else except on Doritos.

TIP:

• This is another dish you can make at home if you want to. Cover with foil and mark each child’s name with a sharpie. You can even slip each tin into a gallon-sized Ziploc bag and freeze it.
